Cherry Almond Slices
Ingredients
Shortbread Crust
- 3/4 cup butter
- 1/3 cup brown sugar
- 1 1/2 cup flour
Topping
- 1 tablespoon unflavored gelatin
- 1/2 cup cold water
- 2 cups white sugar
- 1/2 cup hot water
- 1/2 cup Maraschino cherries, drained and chopped
- 1/2 teaspoon almond extract
- 1 - 2 drops red food coloring
- 1/2 cup slivered almonds
Instructions
Shortbread Crust
- Cream butter and add brown sugar
- Beat until creamy
- Stir in the flour
- When mixture forms a ball of dough, press into 9" x 12" pan
- Prick with fork all over dipped in flour
- Bake at 325 degrees for 25 minutes until golden brown and cool
Topping
- Sprinkle gelatin over cold water and allow to soften
- Combine with sugar and hot water in saucepan
- Place over high heat and bring to boil
- Boil for 2 minutes
- Remove saucepan from heat and add softened gelatin to hot syrup
- Stir until dissolved
- Then beat mixture until it is stiff and white, about 5 - 10 minutes
- Fold in cherries, almond extract, food coloring, and almonds
- Spoon cherry mixture over cooled shortbread in pan
- Allow to cool for several hours
- Cut in squares with sharp knife

There's an error in this recipe. The word "with" before "sugar and hot water" should not be in there--if you combine the gelatin in the saucepan, it will NOT work. You put the sugar and hot water in a saucepan, boil, and then add to the gelatin. I always put the gelatin in the bowl in which I'm going to beat the marshmallow and then pour the hot syrup over it.
