Carrot Nut Scones (VRP 200)
Ingredients
- 1 3/4 cups flour
- 1/4 cup honey-crunch wheat germ
- ½ cup light-brown sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon ground cinnamon; pinch of mace
- 1/4 cup unsalted butter, chilled
- 1/4 cup plain yogurt
- 1 large egg
- 1 teaspoon vanilla
- 1 cup grated carrots
- 2/3 cup golden raisins
- ½ cup chopped pecans
- Yield: 8 scones
Instructions
Preheat oven to 400 degrees. Lightly grease a 10-inch diameter circle in the center of a baking sheet.
In a large bowl, stir together the flour, wheat germ, brown sugar, baking powder, soda, salt, cinnamon and mace. Cut the butter into ½-inch cubes and distribute them over the flour mixture. With a pastry blender or two knives used scissors-fashion, cut in the butter until mixture resembles coarse crumbs. In a small bowl, stir together the yogurt, egg and vanilla. Add the yogurt blend to the flour mixture and stir to combine. Stir in the carrots, raisins and pecans. The dough will be sticky.
Spread dough into an 8½-inch diameter circle in the center of the baking sheet. With a serrated knife, cut into 8 wedges. Bake for about 20 minutes at 400 degrees; cool on wire rack 5 minutes. Re-cut wedges, if necessary. Serve warm or refrigerate in an airtight container. Good to pack along with a container of yogurt for lunch.
