Carrot Cake Recipe

- 2 cup sugar
- 1 ½ cup Wesson oil
- 4 egg yolks
- 3 tablespoons hot water
- 3 cups grated carrots
- 2 ¼ cup flour
- 2 ½ teaspoon Cinnamon
- 1 ½ teaspoon nutmeg
- 1 ½ teaspoon soda
- ½ teaspoon salt
- 1 ½ cup pecans
- Blend all together.
- Beat egg whites stiff but not dry and fold in mixture
- Bake in floured loaf pan about 1 hour at 350°
