Carrot Cake

Carrot Cake (VRP 090)


  • 2 cups sifted flour
  • 2 tsp cinnamon
  • 1 tsp salt
  • add 4 eggs beaten
  • 3 cups grated carrots
  • 2 cups white sugar
  • 2 tsp soda
  • 1 tsp vanilla
  • 1½ cup salad oil


  • [1] (8 oz) pkg Cream Cheese
  • 1 stick soft butter
  • 1 tsp vanilla
  • 2 cups powdered sugar
  • ¾ cup [slack] walnuts


  1. Sift dry ingredients together.
  2. Add beaten eggs, oil, the 3 cups carrots & vanilla. Mix well.
  3. Bake 45 to 50 min in 9x 13 pan at 350°.
  4. This is a moist cake & may be frozen.
