Carrot Cake Recipe (VRP 90)


  • 2 cup sugar
  • 1 ½ cup Wesson oil
  • 4 egg yolks
  • 3 tablespoons hot water
  • 3 cups grated carrots
  • 2 ¼ cup flour
  • 2 ½ teaspoon Cinnamon
  • 1 ½ teaspoon nutmeg
  • 1 ½ teaspoon soda
  • ½ teaspoon salt
  • 1 ½ cup pecans


  1. Blend all together.
  2. Beat egg whites stiff but not dry and fold in mixture
  3. Bake in floured loaf pan about 1 hour at 350°
