Broccoli and Cottage Cheese Salad
Yield: Makes 3 cups or 6 servings

Broccoli and Cottage Cheese Salad

Ingredients

  • 1 package (4-serving size) Sugar Free JELL-O Brand Lemon Flavor Gelatin
  • ½ teaspoon salt
  • 1 cup boiling water
  • 1 package (10 oz.) BIRDS EYE Chopped Broccoli, cut into small cubes
  • 2 teaspoons minced onion
  • ½ cup lowfat cottage cheese
  • 2 tablespoons reduced calorie mayonnaise
  • 2 teaspoons prepared mustard

Instructions

  1. Completely dissolve gelatin and salt in boiling water.
  2. Add broccoli and onion and stir until broccoli thaws and separates.
  3. Add lowfat cottage cheese, mayonnaise and mustard.
  4. Pour into individual dishes or a bowl.
  5. Chill until set, at least 30 minutes.
