Bread Pudding

Bread Pudding (VRP 010)

Ingredients

  • 1 cup bread crumbs, firmly packed
  • 2 cups milk
  • 2 egg yolks, slightly beaten
  • 1 teaspoon grated lemon rind
  • Meringue
  • Red jelly
  • Pinch of salt

Instructions

  1. 1 cup of firmly packed bread crumbs. Soft.
  2. Let soak in 2 cups of milk.
  3. Add 2 slightly beaten egg yolks, add 1 t. grated lemon rind.
  4. Beat thoroughly with egg beater until smooth.
  5. Set in pan of warm water cook 325 until set.
  6. About 15 min. before done, add meringue which has been flavored with 1 t. lemon ju or sext.
  7. Before serving put one spoonful of red jelly in center.
  8. Add pinch of salt.
