Every once and a while you can find a good cookbook with Vintage Recipes on Amazon. I don’t have any recommendations as I haven’t bought any as I prefer the handwritten recipes that you see on our site.

Bran Muffins (VRP 200)

Ingredients

  • 1½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1½ cups bran
  • ½ cup sugar
  • ½ cup raisins
  • ½ cup molasses
  • ½ cup oil
  • 1 slightly beaten egg
  • 1 cup sour milk (milk can be soured fast by adding 1 tablespoon vinegar to it and letting it set a few minutes)
  • ½ teaspoon vanilla

Instructions

Sift flour, baking soda, baking powder and salt. Stir in bran, sugar and raisins.
Combine molasses, oil egg, milk and vanilla and add to flour - bran mixture. Moisten just enough to blend thoroughly and bake in well-greased muffin pans or cupcake papers in a hot oven, 400 degrees, for 20-25 minutes.
Note: You find that my oven bakes a little hotter than most recipes call for. If you don't remove muffins in about 19 minutes they're burned. But test them with a toothpick and make your own judgement.
They're best when warm right from the oven. But extras maybe frozen and reheated in the toaster oven.
