Blue Ribbon Broccoli

Blue Ribbon Broccoli


  • 1 pkg. (10 oz.) frozen chopped broccoli
  • 1 tablespoon margarine
  • 1½ oz. cream cheese
  • 1 tablespoon flour
  • 2 oz. blue cheese, crumbled
  • ½ cup milk
  • ½ can (2.8 oz.) french-fried onion rings


  1. Place package of frozen broccoli on a paper plate or towel on floor of oven.
  2. Microwave on high 5 to 6 minutes.
  3. Squeeze liquid from package and set aside.
  4. Place margarine and cream cheese in a 4-cup glass measure.
  5. Microwave on 50 percent (medium) 2 minutes, or until softened.
  6. Use a whisk to stir in flour, then blue cheese.
  7. Whisk in milk.
  8. Stirring with whisk every minute, microwave on high 2 to 3 minutes, or until mixture comes to a boil and thickens.
  9. Take broccoli out of packaging and place in a 1-quart casserole.
  10. Pour sauce over broccoli and stir to combine.
  11. Sprinkle onions over the top.
  12. Do not cover.
  13. Microwave on 70 percent (medium-high) 4 minutes, or until heated through.
  14. Makes 4 servings, 204 calories each.
