Blue Cheese Potato Salad

Blue Cheese Potato Salad
Ingredients
  • 3 slices bacon, cooked and crumbled
  • 1/4 cup onion, finely chopped
  • 1/2 cup celery
  • 1/2 cup sugar
  • 3 tablespoons flour
  • 1 1/2 teaspoon salt
  • 2 tablespoons vinegar
  • 1/3 cup water
  • 1/2 cup creamy style blue cheese salad dressing
  • 4 – 5 cups potato cubes, cooked
  • 1/2 cups green olives, chopped
Instructions
  1. Fry bacon and remove
  2. Sautee onions and celery in bacon fat until tender
  3. Combine sugar, flour, and salt
  4. Stir into onion celery mixture
  5. Add vinegar and water
  6. Heat until boiling stirring constantly
  7. Pour over potatoes
  8. Add blue cheese dressing and crumbled bacon
  9. Serve hot or cold
