Blue Cheese Potato Salad
Blue Cheese Potato Salad
Ingredients
- 3 slices bacon, cooked and crumbled
- 1/4 cup onion, finely chopped
- 1/2 cup celery
- 1/2 cup sugar
- 3 tablespoons flour
- 1 1/2 teaspoon salt
- 2 tablespoons vinegar
- 1/3 cup water
- 1/2 cup creamy style blue cheese salad dressing
- 4 – 5 cups potato cubes, cooked
- 1/2 cups green olives, chopped
Instructions
- Fry bacon and remove
- Sautee onions and celery in bacon fat until tender
- Combine sugar, flour, and salt
- Stir into onion celery mixture
- Add vinegar and water
- Heat until boiling stirring constantly
- Pour over potatoes
- Add blue cheese dressing and crumbled bacon
- Serve hot or cold
