Best Pecan Pie

Best Pecan Pie
Ingredients
- 8" pie shell
- 2 eggs, separated
- 1 cup sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1 cup pecans, broken pieces
- 1/2 cup raisins
- 4 tablespoons butter, melted
- 2 tablespoons vinegar
Instructions
- Preheat oven to 400 degrees
- Line the 8" pie pan with pastry and refrigerate
- Add the yolks to electric mixer and beat until light and fluffy
- Sift together the sugar, cinnamon, and cloves
- Gradually beat this into beaten egg yolks
- Add pecans, raisins, and melted butter beating on low speed
- Beat egg whites until stiff
- Using spatula fold the whites into egg yolk mixture alternatively with the vinegar
- Pour into pie shell and bake 10 minutes at 400 degrees
- Reduce heat to 350 degrees and bake 20 minutes longer
- Let cool
- Serve with whipped cream
