Beef Bean Enchiladas

Beef Bean Enchiladas


  • 1½ lb. ground beef
  • 1 med. onion, chopped
  • 1 can (16 oz.) refried beans
  • 1 c. pitted ripe olives, quartered
  • ⅓ c. canned or bottled taco sauce
  • 1 tsp. salt
  • 1/8 tsp. garlic powder


  1. In a large skillet over medium-high heat saute beef and onion until meat is browned and onion is tender; drain off fat.
  2. Add beans, olives, taco sauce, salt and garlic powder.
  3. Bring to a boil.
  4. Remove from heat; keep warm.
