Banana Tea Bread
Yield: 1 loaf

Banana Tea Bread

Ingredients

  • 1 cup brown sugar, packed
  • 3 very ripe large bananas, pureed
  • 2 eggs
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 pound (1 stick) melted butter
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. In the bowl of an electric mixer, combine brown sugar, bananas, and eggs.
  2. Beat until frothy.
  3. Beat in flour, baking soda, and salt.
  4. Add melted butter, and beat to blend.
  5. Stir in walnuts, if using.
  6. Pour batter into buttered 9" x 5" loaf pan, and bake at 350 degrees for 55 - 60 minutes, or until a wood pick inserted in the center comes out clean.
