Asparagus Au Gratin

A Short History

The term “au gratin” is French and refers to a dish topped with breadcrumbs or cheese and then browned to perfection. This cooking technique has been embraced worldwide, known for adding a delightful depth and richness to vegetables and other ingredients. Asparagus, with its distinct, slightly nutty flavor, makes an excellent base for au gratin, marrying well with the creamy sauce and crispy topping.

Tips for Making Asparagus Au Gratin

  • Soft Bread Crumbs: For the best texture, use fresh bread crumbs that have been lightly tossed with melted butter, offering a crispy topping once baked.
  • White Sauce: The foundation of the dish, a roux-based white sauce, is simple but requires attention to ensure a smooth, lump-free consistency. Adding cheese to the sauce is optional but highly recommended for a richer flavor.
  • Layering: Assembling the dish in layers of asparagus, hard-boiled eggs (if using), and cheese sauce ensures that every bite is full of flavor and texture.
  • Seasoning: Don’t underestimate the power of seasoning. A dash of pepper and a bit of salt in the sauce can dramatically enhance the overall taste of the dish.
  • Baking: Baking until the top is golden and bubbly creates a beautiful presentation and ensures the flavors meld together beautifully.
