Apricot Butter Bars

Apricot Butter Bars

Cook Time: 55 minutes
Total Time: 55 minutes

Ingredients

  • 1/2 cup butter, softened
  • 1 cup flour, sifted
  • 1/4 cup sugar
  • 1 cup dried apricots, chopped
  • 2 eggs, well beaten
  • 1 cup brown sugar, packed
  • 1/2 teaspoon vanilla
  • 1/3 cup flour sifted
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup walnuts, chopped

Instructions

  1. Combine the butter, flour, and sugar with pastry blender until crumbly
  2. Press into bottom of ungreased 9" x 9" baking pan
  3. Bake at 325 degrees for 25 minutes
  4. Meanwhile, rinse the chopped apricots and cover with cold water
  5. Simmer the apricots for 10 minutes and drain
  6. Allow the apricots to cool
  7. Beat the eggs with the sugar and vanilla
  8. Sift the dry ingredients together and blend into the egg mixture
  9. Add the nuts and apricots
  10. Spread batter over the baked crust
  11. Bake at 30 degrees for 30 minutes
