Applesauce Oat Muffins

Applesauce Oat Muffins (VRP 200)


  • 2 cups Cheerlos cereal, crushed (about 1 cup)
  • 1 1/4 cups Gold Medal all-purpose flour
  • 1/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 cup applesauce
  • 1/3 cup skim milk
  • ½ cup raisins
  • 3 tablespoons vegetable oil
  • 1 egg white


    Heat oven to 400°. Grease bottoms only of 12 medium muffin cups, 2½ x 1¼ inches. Mix cereal, flour, brown sugar, cinnamon, baking powder and baking soda in large bowl. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups. Bake until golden brown, 18 to 22 minutes. 12 muffins.
    High Altitude Directions (3500 to 6500 feet): Heat oven to 425°. Decrease brown sugar to 1/4 cup and applesauce to 3/4 cup. Bake 15 to 20 minutes.
