Apple Nut Berry Salad Recipe

Apple Nut Berry Salad
Yield: 6 - 8

Apple Nut Berry Salad


  • 2 tablespoons unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup sugar
  • 1 1/2 cup cranberry juice cocktail
  • 1/2 cup lemon juice, fresh
  • red food color, optional
  • 1/2 cup pecans, chopped
  • 2 cups apples, peeled and diced
  • 1/2 cup celery, thinly sliced


  1. Sprinkle gelatin over water in a saucepan
  2. Cook over low heat, stirring constantly until gelatin dissolves (about 2 - 3 minutes)
  3. Remove from heat
  4. Add sugar and stir until dissolved
  5. Add cranberry juice and lemon juice (and red food color for deeper red color)
  6. Chill until slightly thicker than the consistency of unbeaten egg whites
  7. Fold in pecans, apples, and celery
  8. Turn into a 5 cup mold which has been lightly oiled or dipped in cold water
  9. Chill overnight if preferred
