Apple Cranberry Salad Recipe
Apple Cranberry Salad (VRP 153)
Ingredients
- Four cups cranberries
- Two cups water
- Two cups sugar
- Two and one-half tablespoons gelatin
- One-fourth cup cold water
- One-half cup ground roasted peanuts
- One cup chopped apples
- One cup diced celery
Instructions
- Cook cranberries with water until the skins are broken.
- Rub through sieve.
- Add sugar and cook five minutes.
- Soak gelatin in cold water for five minutes and add to hot cranberry mixture.
- When the mixture begins to thicken, add celery, apples and nuts.
- Turn into molds and chill.
- Serve on lettuce leaves with mayonnaise or cooked salad dressing.
