Apple Butter Nut Cake
Yield: 1 x 10" ring cake

Apple Butter Nut Cake

Cook Time: 50 minutes
Total Time: 50 minutes

Ingredients

Topping

  • 1 cup nuts, finely chopped
  • 2 tablespoons brown sugar
  • 2 teaspoons cinnamon
  • 1 cup confectioners sugar
  • 2 - 3 tablespoons apple butter

Cake Batter

  • 1 package yellow cake mix
  • 1 cup nuts, finely chopped
  • 1 cup apples, peeled and finely chopped
  • 1 cup sour cream
  • 4 eggs
  • 1/3 cup apple butter

Instructions

  1. Using solid shortening, grease and flour 12 cup fluted tube pan
  2. In a small bowl combine the brown sugar, nuts, and cinnamon
  3. In a large bowl blend all but the confectioners sugar and apple butter
  4. Beat 2 minutes at high speed
  5. Pour 3 cups batter into prepared pan
  6. Sprinkle with 1/2 of the nut mixture
  7. Repeat ending with batter
  8. Bake at 350 degrees for 50 - 55 minutes or until a toothpick comes out clean (325 for colored flute pan)
  9. Cool upright in pan for 15 minutes, turn onto serving plate
  10. Cool completely
  11. In a small bowl blend remaining ingredients until smooth and spoon over cake

  • 1 pkg. yellow cake mix
  • 1 pkg. yellow cake mix
  • 1 cup finely chopped nuts
  • 1 cup finely chopped nuts
  • 1 cup peeled finely chopped apple
  • 1 cup peeled finely chopped apple
  • 1 cup sour cream
  • 1 cup sour cream
  • 1/3 cup apple butter
  • 1/3 cup apple butter
  • 4 eggs
  • 4 eggs
  • 1 cup sugar
  • 1 cup sugar
  • 2 to 3 tablespoon apple butter
  • 2 to 3 tablespoon apple butter

Instructions

Sprinkle with ½ of nut mixture. Repeat ending with batter. Bake at 350° (325° for oven colored fluted tube pan) for 50 to 55 minutes, or till toothpick comes out clean. Cool upright in pan for 15 minutes, turn onto serving plate, cool completely in small bowl, blend remaining ingredient until smooth spoon over cake. Makes a 10min ring.
