Angel Pie

Cook Time: 1 hour
Total Time: 1 hour

Ingredients

  • 4 eggs, separated
  • 1 teaspoon cream of tartar
  • 1 1/2 cups sugar, divided
  • 1 lemon, juice and grated rind
  • 1/2 cup heavy cream, whipped
  • Fruit for garnishment

Instructions

  1. Beat eggs whites until very stiff
  2. Add cream of tartar when just fluffy
  3. Slowly add 1 cup of the sugar and beat (says for 15 minutes but this is assuming hand mixing)
  4. Place mixture in buttered pie tin
  5. Bake at 350 degrees for 1 hour
  6. Cool
  7. In double boiler beat egg yolk with 1/2 cup sugar
  8. Add lemon juice and grated rind
  9. Stir and cook until thickened
  10. Cool filling and pour over baked meringue
  11. Top with whipped cream
  12. Garnish with strawberries or other fruit if desired

Ingredients

  • 4 eggs seperated
  • 1 teaspoon cream of tartar
  • 1½ cup sugar
  • 1 lemon
  • ½ cup heavy cream whipped

Instructions

Beat egg white 15minutes until very stiff. Add cream of tartar when just fluffy. Slowly add 1 cup of sugar and beat for another 15minutes. Place mixture in buttered pie tin. Bake 1 hour at 300°. Cool.
In double boiler, heat egg yolk with ½ cup sugar, add juice and grated rind of 1 lemon, stir and cook until thickened, cool filling and pour over baked meringue top with whipped cream, garnish with strawberries or other fruit if desired.
