Angel Peach Cake

Angel Peach Cake

Ingredients

  • 2 cups mashed peaches
  • 6 egg yolks, beaten
  • 3/4 cup sugar
  • 1/2 cup lemon juice
  • 1 1/2 teaspoon lemon peel, grated
  • 2 tablespoons plain gelatin
  • 1/2 cup cold water
  • 6 egg whites, stiffly beaten
  • 3/4 cup sugar
  • large angel food cake
  • Sliced peaches
  • Peach halves
  • Whipped cream

Instructions

  1. Make a custard of the egg yolks, sugar, lemon juice, and lemon peel
  2. Cook over hot water until it coats the spoon
  3. Remove from heat
  4. Add gelatin, soften in the cold water
  5. Fold in the egg white beaten with remaining 3/4 cup of sugar and the mashed peaches
  6. Tear angel food cake in bite-size pieces
  7. Pour custard over cake and pour into a well oiled angel cake pan or spring mold
  8. Before pouring into pan, arrange slices of each on the bottom of pan
  9. Chill
  10. Serve with peach halves and whipped cream

Angel Peach Cake (VRP 034)

  • 1½ teaspoons grated lemon peel
  • 2 tablespoons plain gelatin (2 envelopes)
  • ½ cup cold water
  • 6 stiffly beaten egg whites
  • 3/4 cup sugar
  • Large angel cake (one)

Instructions

Make a custard of the egg yolks, 3/4 cup sugar, lemon juice and peel. Cook over hot water until it coats the spoon. Remove from heat, add gelatin, soften in cold water, fold in the egg whites beaten with remaining 3/4 cup sugar, and the mashed peaches. Tear angel cake in bite-size pieces, pour custard over cake, and pour into a well oiled angel cake pan or spring mold. Before pouring into pan arrange slices of peaches on the bottom of pan. Chill. Serve with peach halves and whipped cream. This cake will keep for a week in an electric refrigerator.
