Recipe Discussion

This Angel Food Cake recipe is a true classic, requiring only a handful of ingredients: egg whites, sugar, flour, salt, cream of tartar, and lemon extract. The key to achieving the perfect Angel Food Cake lies in the preparation of the egg whites. They must be beaten to stiff peaks, which is made easier with the addition of cream of tartar—a stabilizing agent that helps the egg whites maintain their structure during baking.

Once the egg whites are ready, sugar is gradually incorporated to create a glossy meringue. The cake flour, known for its fine texture, is gently folded in at the end to preserve the delicate air bubbles that give the cake its signature lightness. This recipe, hailing from the Hotpoint Cook Book, also introduces a unique baking method: starting the cake in a cold oven and then gradually raising the temperature to 350°F. This slow, gentle baking process ensures the cake rises evenly and maintains its airy texture.

Preparation Tips

  • Egg Whites: Ensure that your egg whites are at room temperature before beating. This will help them whip up more easily and achieve greater volume.
  • Folding Technique: When incorporating the flour into the beaten egg whites, use a gentle folding motion to avoid deflating the batter. A light hand will preserve the cake’s airy structure.
  • Pan Preparation: Traditional Angel Food Cakes are baked in an ungreased tube pan, which allows the cake to cling to the sides as it rises. After baking, invert the pan to cool, which helps maintain the cake’s height.
