Almond Vegetables

Vintage Recipe Box 400 comes to us from Chalfont, Bucks County, Pennsylvania.
It is a large white metal box that measures 12” D x 5.5” W x 4” H and has a metal tag that says “American Home Menu Maker.” According to my research, the box was sold in multiple colors for $1 and included 212 “basic recipes” for an additional $.50. (See the image below, which is an order form to purchase the box.)
At this time, we do not know anything about the history of the box. We do show that this box came to us with another box, but at this time, we are not sure if the same person owned them or if the eBay seller grouped them.

Food History
Stir-frying is a cooking technique that originated in China and involves cooking food quickly over high heat in a small amount of oil. It’s known for retaining the freshness and nutrients of the ingredients. Almonds, used in various cuisines worldwide, add a nutty flavor and crunchy texture that complements the tender, crisp vegetables.
Recipe Discussion
The recipe starts by stir-frying thinly sliced carrots and green beans in salad oil, ensuring they start to soften but retain some bite. Cauliflower and green onions are then added to the mix, enhancing the dish’s texture and flavor complexity. A sauce made from water, cornstarch, garlic powder, and chicken stock base is stirred in to bind the ingredients and create a light, savory glaze. The dish is finished by adding unbleached almonds, which contribute a delightful crunch and nuttiness.
Serving Suggestions
Almond Vegetables can be served as a side dish alongside grilled meats or tofu for a balanced meal. It also works well as part of a multi-dish spread, offering a light and healthy option that pairs excellently with richer dishes. For a complete meal, serve it over a bed of steamed rice or noodles.
Preparation Tips
- Vegetable Prep: Ensure all vegetables are sliced uniformly to promote even cooking.
- Stir-Frying: Keep the heat medium-high to high to quickly cook the vegetables while maintaining their vibrant color and crunch.
- Cornstarch Mixture: Mix the cornstarch with cold water before adding it to the hot pan to prevent clumping.
- Final Touch: Add the almonds at the end of the cooking process to maintain their crunch and prevent them from becoming too soft.
